I just made the most delicious soup for dinner! Credit to Carolyn at Umami Girl! She rocked this recipe.
It was so good! Easy too! Vegetarian too! Normally I make this soup but instead throw chicken stock and fresh spinach into a pot. Then I boil some tortellini and add that to the mixture. Soooo delicious and super easy!
The recipe I am sharing with you today is my new favorite version. It has a much deeper and richer flavor.
I have been wanting to explore all my of my options for healthy eating so I am trying out some vegetarian recipes. It’s not something I have ever done on purpose so I am going into uncharted territory! I absolutely love the taste of the sauteed onions, celery and carrots together, mixed with a rich vegetable broth, fresh spinach and delicious tortellini! This one is definitely a keeper!
If you don’t know by now, I love to automate as much as possible in my day-to-day life. Recipes and menus are no different. With the keeper recipes I copy and paste the recipe link into an all day event in my calendar and then have it repeat every three months. This way I do not have to create a new menu every week. I simply create it once and have it repeat four times a year. It’s a perfect way to save time and create less stress in my weekly preparations.
